The 36-year-old revealed special moments like this are what motivates him to keep playing.
Speaking to RangersTV, he said: “I have dedicated my whole career and my whole life for these kinds of moments.
“I always knew it would happen at some point in my career and that is the thing that has kept me going to be honest.
“People always say what has kept you going and how do you stay motivated and it is for moments like this.
“Especially with this group of players, the staff, everyone that has been involved, the people in the kitchen, the girls that do the admin - it has been a team effort. This is why you play football, for moments like this.
“You will never forget these moments and it is so special when you share a dressing room with these kinds of people. The manager said it probably won't sink in yet but when it does it it will be unbelievable.”
The striker said it ‘means the world’ to him to be part of the squad to secure Gers their 55th league title.
He continued: “It is emotional, the first thing I did was Facetime my mum, I am pleased for everyone, even the younger lads that have come in this year and the new signings.
“It has been difficult for them not really witnessing what it is like at Ibrox with the fans but everyone has played their part and it has been an unbelievable season.
“We have stayed consistent which is always difficult but to win a league title is something special and to be part of this group and win the 55th league title for this football club it is amazing.
“When we came back in pre-season I sensed a different focus, I’m not saying we weren't focused before but there was a different kind of focus - that focus where we don't want to come second we want to be first and we want to be champions.”
Defoe had a final word for Gers fans, he continued: “I thought this has got to be our season we have to do it and 55 league titles is unreal.
“It is something the fans have been craving so it is not just for the players and the staff it is for the fans because football is about the fans and they have not been able to be at any games this season and I hope they are happy now.”

After a superb campaign so far, Gers’ win over St Mirren yesterday put them on the verge of glory, with results elsewhere today meaning they can mathematically no longer be caught with incredibly six matches still to play.
It’s title number 55 for the club – the most of any football club in the world – and the first in 10 years following one of the most arduous decades in the club’s history.
There is little doubt today’s success can be put down to the unbelievable loyalty of the Rangers support – you stood by this club in its hour of need, and you deserve this success as much as every member of Steven Gerrard’s players and backroom staff, Ross Wilson, Douglas Park and the club’s board.
They have been simply outstanding this season, and are still unbeaten and have a Last 16 UEFA Europa League tie with Slavia Prague to look forward to on Thursday night.
With 32 matches played, Gers have accumulated 88 points through 28 wins and four draws. 77 goals have been scored, and, unbelievably at this stage of the season, just nine have been conceded.
